How is the technic called, Ye uses in his live Runaway performances?

You know, these "ladies and gentlemen" and "Who let ya"...


And while I'm at it, asking noobish questions - I just don't understand what he says instead of "that's how long i've been on ya" during most of his Live Stronger performances (like the awesome 2008 grammy one)

The technique is almost the same concept as deejaying. Kanye has a drum machine with certain efx preset to certain buttons. During the performance he just presses the buttons therefore playing the sound he chooses.

To my knowledge, he says the same thing as the studio version.

The only term I can think of would be "punching in"... Sometimes while recording music artist tend to "punch-in" their vocals whenever they are unable to say it all in one track.
