In other cases known names are used to make things look nicer and the people who really did the work remain behind the scenes. On Death Row it was common to put Dr. Dre's name in the producer slot even when he never even touched certain tracks. Kanye is surely listed as a producer on his own tracks even if all he did was adding a pause or a break. Co-producers can be individuals who for example sing a melody so that the "producer" or his/her employees can make the track.

Turning credits from booklets into trustworthy information just does not work. Try collecting items and contacting people and you might be enlightened.

Unfortunately in this specific case there's written documentation straight from people's mouths that suggest that Kanye had a very large part in creating this record

That is already much better, but still not perfect. In certain cases featured rappers have been found out to be lying about details for unknown reasons. :) There is no absolute truth that can be told. That is why I really wonder how easily people start claiming they know stuff. The "know it all" type of people exist on all fan forums. It's amazing how often they are wrong.
