I just watched Phantom of Requiem which is a hitman series of sorts but I enjoyed it.

My top recommendation is Yu Yu Hako Sho if you never watched it. When it get's going it's the ****.
Hajime No Ippo is a Boxing anime but it's still fighting. Baki no grappler is a more serious one but some people like it.

Sun-Ken Rock(comedy, not too much superhuman strenght), Fist of the North Star(classic stuff), The Breaker, the Breaker New Waves (both Breaker series are more of a modern styl fighting manga), Veritas(kinda like The Breaker), Samurai Deeper Kyo(kinda standard shounen), Tough(18+),  Blood Lad(some sort of vampire demon fights and stuff).

besides the really obvious ones.
